Lucas is about to leave on pretty lengthy work trip, so I’m trying to prep some meals ahead of time (unlike all the other times when I’m VERY unprepared).
Usually prepped-before-hand-freezer-meals are just crock-pot dump meals, which is totally fine. But that’s just not my family’s preference for meals that we’re going to be eating every single week. So these take a little more time on the prepping end, but will be worth it when you come home exhausted on a Thursday night and just need to throw something delicious, hearty, and (relatively) healthy in the oven.
I placed a grocery order for everything I need and Lucas + I worked out a day that I can be kid-free to knock out all the prepping. One day of prep-intensive time in the kitchen is going to completely SAVE my sanity!
Here are the recipes I’m using, as well as a shopping list (at the bottom) of all the things you’d need to get from the store to make these. I’m also prepping a few breakfast/snack things that I’ll share.

2 c shredded chicken
2 c colby jack cheese
19 oz. green chile enchilada sauce
1 c sour cream
6-8 corn (flour) tortillas
4.5 oz chopped green chiles
salt and pepper
DIRECTIONS
-combine chicken, cheese, chiles, salt, + pepper
-heat enchilada sauce in skillet, dip each tortilla into sauce for a few seconds to soften
-spoon 1/3 c of chicken mixture and 2 tbs sour cream down center for each tortilla
-roll tortilla and place seem-side down in square baking dish
-repeat
-pour remaining sauce over top, sprinkle with 1 c remaining cheese
-cover + freeze OR
-bake 20 minutes at 350*F

1 pound ground meat
box of oven-ready lasagna noodles
block of mozzarella cheese
16 oz. ricotta cheese
large jar of pasta sauce
DIRECTIONS
Layer:
-thin layer of sauce
-noodles
-ricotta cheese
-mozzarella cheese
-1/2 meat sauce mixture
-noodles
-1/2 meat sauce mixture
-mozzarella
-cover + freeze OR
-bake for 30 minutes at 350*F

1 c chopped onion
2 celery stalks
1 c carrots
1/3 c butter, melted
1/2 c flour
2 c chicken broth
1 c half + half
4 c chopped, cooked chicken
1 c frozen peas
1 1/2 tsp salt
1/4 tsp pepper
4 pie crusts
DIRECTIONS
-saute first 3 ingredients in butter
-add flour, stir until smooth, cook 1 minute, stirring constantly
-add broth, half + half, cook/stir constantly until thick and bubbly
-stir in chicken, peas, salt + pepper
-put pie crust in base of pie pan, fill with half of pot pie filling, cover with pie crust, make slits in the top (repeat for other pie)
-bake uncovered for 30 minutes, then covered with foil for 30 minutes
-let rest at least 10 minutes before serving/eating
-if freezing, bake for just 30 minutes, let cool completely, then cover + freeze
-thaw, bake for 30 minutes, covered

1 1/4 tsp active dry yeast
1/2 tsp sugar
1/4 cup lukewarm water
3 1/2 c flour
2 tsp salt
1/4 c olive oil
1 c + 1 tbs room-temp water
cooking spray
DIRECTIONS
-stir together yeast, sugar, warm water, let stand until foamy (5 min.)
-add flour to mixer w/ dough hook, sprinkle salt over top and mix for 15 seconds
-add olive oil, room-temp. water, and yeast mixture and mix on low for 1-2 minutes, increase the speed to medium + mix until a dough ball forms
-separate into two, wrap in plastic wrap, freeze
-(dough will rise when it’s thawing, before you use it)
-shred mozzarella (or buy pre-shredded) and throw in the freezer to use when it’s time for pizza night
1 tbs veg oil
1 lb ground italian sausage
1/2 c diced onions
1 tbs minced garlic
28 oz crushed tomatoes
32 oz chicken broth
2 tbs fresh basil
1 tsp salt
1/2 tsp pepper
9 oz (I like to do more, though) tortellini
2 c fresh spinach
DIRECTIONS
-heat veg oil over med-high heat, add onions – saute
-cook sausage + garlic with onion until sausage is no longer pink
-stir in crushed tomatoes, broth, basil, salt + pepper, bring to a boil then reduce heat to low and cover
-simmer 20-30 minutes
-add tortellini + spinach, simmer for 10 minutes until tortellini is tender
-let cool, then freeze
-serve with fresh parm

-brown meat in skillet
-add taco seasoning + water
-simmer until cooked and combined
-cool, then freeze

1/2 c butter, softened
2 c sugar
2 eggs
4 ripe bananas
3 c flour
1 1/2 c chocolate chips
2 tsp baking powder
2 tsp baking soda
1 tsp salt
1 tsp vanilla
3/4 c sour cream
(nuts: optional)
DIRECTIONS
-cream butter + sugar, add eggs
-mash bananas + add, stir in vanilla
-sift salt, baking soda, baking powder, flour together + add
-fold in sour cream + chocolate chips
-grease muffin tins
-bake for 1 hour (approx.) at 325*F
-(check for doneness earlier than 1 hour)
-let cool, freeze

2 c rolled oats
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder
1/4 tsp salt
1 c milk of choice
1/3 c maple syrup or honey
2 eggs, room temp.
1 tsp vanilla
1 1/2 c blueberries
1 c grated zucchini
1 1/2 tbs melted coco oil
DIRECTIONS
-preheat oven to 375*F, grease 8×8 baking dish with 1/2 tbs coco oil
-combine oats, cinnamon, nutmeg, baking powder, salt, then mix to combine
-add eggs, milk, vanilla, rest of coco oil, maple syrup/honey, stir to combine
-fold in 1 c blueberries and zucchini
-spread into baking dish (or in muffin tins) and top with remaining berries
-bake for 40-45 minutes, oatmeal is done when top is golden
-let cool, then freeze
-enjoy (thawed) warm with splash of milk, yogurt, bananas, more berries, etc.

2 c flour
1 3/4 c milk
2 eggs, beaten
4 tsp baking powder
2 tbs sugar
1 tsp salt
1 stick butter, melted
DIRECTIONS
-mix everything together, then add melted butter
-could also add: berries, chocolate chips, coconut, etc.
-baking in waffle iron
-let cool on baking rack, then freeze
