Think: Twice-Baked Potato Casserole
This is a must-have on my Thanksgiving table. If I’m a guest, I’m making it. If I’m hosting, I’m making it.
Bonus that you can make it ahead of time and warm up in time for dinner. No need to worry about messing up the “oven schedule” with this dish.
Recipe
(you can half the recipe for a smaller crowd)
8 large baking potatoes
¼ c butter
1 c sour cream
1 egg
1 tsp salt
1/8 tsp pepper
9 bacon slices
dash of paprika
cheddar cheese, shredded
-peel potatoes, boil, mash
-add the rest of the ingredients
-bake for 30 min. at 350 degrees F
-take out, cover with cheese
-bake for 30 more min.

Yes! I bake it beforehand and usually add about 8-9 slices. But you can never have too much bacon in my opinion 🙂
