Being in the military definitely its challenges, but it also has a lot of upsides. One of the biggest ones being the people you get to meet along the way. They are all different with different backgrounds, cultures, and families. And these families? Well, they almost always have recipes they’re willing to share.
We met a family early on in New York City (I was maybe 3?) and stayed connected through the years. We stayed so connected, that my longtime friend, Katie, ended up marrying my brother! So this family, the Beyer family, was and still is an important one to me. Not only did the Beyer family give me a sister-in-law, but also this banana bread recipe.
But you’re in luck. You don’t need to enlist in the military to get this recipe. With permission, I’m sharing it with you today!
Chocolate Chip Banana Bread

1/2 c butter, soft
2 eggs
3 c flour
2 tsp baking powder
1 tsp salt
3/4 c sour cream (heaping)
2 c sugar
4 ripe bananas*
1 1/2 c chocolate chips
1 tsp baking soda
1 tsp vanilla
3/4 cup nuts (optional)
-cream butter + sugar, add eggs
-mash bananas, add, stir
-sift salt, baking soda, powder, + flour together, add to mixer
-fold in sour cream + chocolate chips
-grease and flour 2 loaf pans, add batter
-bake at 325*F
-check after 45 minutes, may take up to 1 hour and 15 mins.
*I like to collect bruised and old bananas for a few weeks. After Lucas and I fight over the banana’s fate, for his smoothies or my banana bread, I’ll put it (skin on) in the freezer. Once I have four bananas, I’ll prep to make banana bread. A few hours before I’m ready to bake the bread, I’ll set the bananas out on the counter to thaw. Once the batter is ready and the bananas are thawed, I’ll use scissors to cut off one end of the banana. It’ll be super mushy so be prepared for it to slide right out. Hold it over the mixing bowl, and let it fall in. No need to mash them! Repeat 4x.
